Brass and copper are excellent conductors of heat, but cooking acidic foods directly on raw brass can create a bitter, metallic taste. Kalai is the ancient Ayurvedic solution.

Skilled artisans apply a thin, food-grade layer of pure tin to the interior of the vessel over an open flame. This creates a brilliant silver barrier that makes the pot 100% safe for all types of cooking, while the thick brass exterior provides unmatched slow heat distribution.

Note: Because Kalai is applied by hand, the interior may feature natural wipe marks. This is the mark of authentic craftsmanship.

Preserving Your Investment

✅ Cooking & Cleaning Dos

  • Do use wooden or silicone spatulas (like our Neem Wood utensils) to protect the tin lining.
  • Do cook on low to medium heat. The heavy metal conducts heat so well that high flames are rarely necessary.
  • Do clean the inside with a soft sponge and mild dish soap.
  • Do clean the outside with natural ingredients like tamarind or lemon and salt to restore the golden shine.

  • Don't ever use steel wool or abrasive scrubbers on the silver interior—it will scratch the Kalai off.
  • Don't put these vessels in the dishwasher. Harsh detergents will permanently tarnish the metal.
  • Don't leave empty Kalai vessels on a high flame. The pure tin lining has a low melting point and can melt if overheated dry.

Does the silver coating (Kalai) wear off?

Yes. Over time with frequent use, the tin lining will naturally begin to wear thin. This is completely normal. When you see the golden brass starting to show through the silver interior over large areas, it is time to have the vessel re-tinned by a local artisan, or you can reserve it strictly for non-acidic cooking (like frying).

Can I use these pots on an induction stove?

Traditional brass and bronze are non-magnetic and will not work on an induction cooktop. They are specifically designed for gas stoves, electric coils, or traditional wood fires.

What is the difference between Brass and Kansa?

Brass (Pital) is an alloy of Copper and Zinc, ideal for cooking due to its high heat conductivity.
